homemade samoa cookies

ingredients:

6 tablespoons butter

1/2 cup Karo corn syrup lite

1/2 cup sugar

1/2 can of 14 oz sweetened condensed milk (yum)

1/2 teaspoon vanilla extract

4 cups toasted coconut

vanilla wafers

1 cup semi sweet chocolate chips

directions:

1. in a saucepan, combine butter, sugar and corn syrup. cook on low heat and stir a lot

2. once that comes to a boil, add the sweetened condensed milk. stir/cook until it turns medium golden brown (well, if you have a candy temperature, cook it til it gets to 220-228 degrees). remove from heat and add vanilla

3. add toasted coconut and stir it right up

4. spoon small little roundies onto wax paper on top of a vanilla wafer and let em coool down til theyre hardened. (i put it in the freezer for a few seconds cause i got impatient and hungry)

5. melt chocolate chips in the microwave until its a lovely drizzly texture and drizzle it right on top of those cookies!

6. let the chocolate harden and then eat emmmmm

my best friend is the best best friend in the whole wide world.

he is also romantic and very good at making me feel loved. and he's a good dancer too. and good looking.

and yesterday was the greatest valentines day i ever did have. he had a very nice fancy table set--with flower petals and candles and table cloths and sparkling cider!!! and he made me dinner--tortellinis and garlic bread with an appetizer of candy--and he also put together a very cheesy slideshow of all of our pictures which may or may not gave me tears in my eyes (i dont even care, it was valentines day!!!!!!!).  and then we danced (it was even on the agenda!!!!!!) and layed on the floor. and we also sang some songs and took some pictures (which are to come!) and it was just the greatest romantical night ever!

they dont come sweeter than this guy.

this weekend was my favorite.
i went down to visit stephie!!!!!!! we ate soo many cookies and flaming cheeto puffs/puffcorns and other sorts of flaming things and sushi and sweet tea and DORITOS. what didnt we eat, jeez.
also. we had the funnest time ever laughing and remembering memories. she's one of my very favorite people in the entire world. and her family is just as wonderful!!!!

people are soo interesting. i might have a staring problem or i might just like watching people but either way, i think people are so interesting. the faces they make, the way they talk to someone they love or someone they dont know, the way they walk- and its all different. and god made them exactly that way because he wanted them just like that. and that is so rad.
keep having weird little quirks all you people out there, i love watchin em.

i found out one of the greatest things ever, polaroid made a camera that is pretty much exactly like the instax but its cheaper and the film is also a lot cheaper AND they sell it at target!!!!! wowwwww right?

today anna and me made a valentimes day band. and we only sing songs about valentines day and love. we made instruments out of waffle boxes and a can (lots of percussion.)
here is one of anna's lyrics. "when i look at you you make me smile, valentimes day is for love, you dazzle in my eyes and in real life, hugs and kisses and love and valentimes."

i love my job.

this weekend was adventurous.
carl, ariel & i drove up to good ole santa maria for the weekend and we had soo much fun. my favorite part was hiking up in the hills and balancing on this long pipe on the ground, it was hard!!!

today, starbucks released its new drink size, the trenta. its 31 ounces of fluid!!!!!!!!!!!! right now you can only get iced tea or iced coffee in the trenta size but i am sure that soon and very soon, fraps and hot drinks will follow suit.

i got one today, passion iced tea, and i can not even tell ya how badly i had to pee.

so my blogging every day has obviously proven to be a little more difficult than expected. but i am stilll trying!

its been a weird couple of days. camille has moved out and its soo weird not having her here and knowing that she's not comin home tonight. the whole place has like a different atmospher almost...its weird. she will be greatly missed.

i bought my first appliance, an electric tea pot! its wonderful.

i received my first pair of toms!!!!!!!!!!! burlap ones. they're not comfortable yet at all but i have much faith.

zach came down for a real live date night on thursday-- we made dinner and went to starbucks and talked and it was so nice just having a casual night together!! he came down again on sunday for lunch with my auntie tami and cindy. we got sushi at the harbor and i must say, it was some goood sushi. and good company and good conversation. and then me and zach went to the outlets and to tc's college group!!! it was a wonderful way to spend a sunday afternoon after church.

which was also really good. britt merrick has a way with teaching and such a knowledge of the bible, i really love listening to him teach. he talked about how the gospel never aims to shame but always aims towards redemption. anyways, it was a really good sermon and really good worship. i am soo thankful for our church, i have always been really blessed with the churches i have become a part of and i am really glad God brought me here to ventura.

ps i love my job still.
